Meet Our Owners
Holden Fulco is Owner/Pitmaster of Parish Barbecue in Austin, TX. He is joined in ownership by his incredible and supportive wife Taylor. Holden was born and raised in Shreveport, LA and spent his childhood immersed in the culture and food of Louisiana. Fish fries and crawfish boils were a weekly occurrence, and good times with family always revolved around a great meal. Dreaming of opening his own bbq restaurant one day, Holden graduated from Louisiana Tech University with a degree in Business Administration, and moved to Houston to start a career in bbq. From 2018-2024, Holden cooked/managed at three bbq joints in the Texas Monthly Top 50, spending the last 4 years at Interstellar BBQ, helping them achieve the number-2 rank in Texas along with a Michelin Star. Holden opened Parish Barbecue in 2025 in Austin, bringing forward the flavors of Louisiana Cajun cooking and combining them with the best of Central Texas Barbecue. In less than one year of business, Parish Barbecue has earned numerous accolades, including a Michelin Guide Bib Gourmand.
